How to make: Cherry and Sultana Rock Cakes


Hey guys, my name is Jack and welcome to a post. In this post we will be doing my very first cooking post. I would like to start this series as I love baking and it is one of my favourite things to do. These are not my recipe this is out of a book called 100 best recipes Baking.


85g/3 oz of Butter (You will need a bit more for greasing

250g/90z of self-raising flour

1sp ground mixed spice

85g/3oz caster sugar

55g/2oz of glace cherries, quartered

1 egg

2 tbsp. milk

50g/2oz of sultanas


  1. Preheat the oven to 200 Celsius/ 400 Fahrenheit
  2. Then grease the baking sheet
  3. Sift the flour and mixed spice into a bowl
  4. Add the butter and  rub in until mixture resembles breadcrumbs
  5. Stir in the sugar, cherries and sultanas
  6. Break the egg into a bowl and whisk in the milk
  7. Pour the egg mixture into the dry ingredients and mix with a wooden spoon
  8. Shape them into rocks and on the baking sheet
  9. Bake in the preheated oven for 15 minutes
  10. Take them out and then leave it to cool for two minutes
  11. Then transfer them to  a wire rack to cool completely
